&quot;Wyoming Night&quot; featuring Jackson Beef and Wyoming Whiskey at his restaurant in Manhattan. \u201cEverybody wants to be a cowboy, especially in New York,\u201d said Wyoming Whiskey co-founder David DeFazio.<br \/><span class=\"p8ohjc6 p8ohjc0 _1ydpsnb1 _10mr6051 vbxqml4\">April 18, 2026<\/span><span class=\"p8ohjc6 p8ohjc0 _1ydpsnb1 _10mr6051 vbxqml4\">4 min read<\/span><br \/><span>At a dinner on a Friday night, it was all-things Wyoming as far as the eye could see.<\/span><br \/><span>The Wyoming Whiskey was flowing, while long tables were stacked high with ribeye and hanger steak straight from Mead Ranch in Jackson.<\/span><br \/><span>While a few diners did wear cowboy boots and took in some bull riding that weekend, this January feast was happening some 2,000 miles away from the Cowboy State in \u2014 in New York City.<\/span><br \/><span>\u201cNew York City?\u201d One might exclaim, channeling those famous Pace picante sauce ads of the 1990s.<\/span><br \/><span>Indeed, New Yorkers ate up the opportunity to feast on some of Wyoming\u2019s finest fare and the $295-per-seat tickets sold out quickly.<\/span><br \/><span>Though the first to feature Wyoming brands so prominently, this wasn\u2019t the first rodeo for renowned chef and restaurateur\u00a0<a href=\"https:\/\/chefmarcmurphy.com\/\" rel=\"noopener noreferrer\" target=\"_blank\">Marc Murphy<\/a>.\u00a0<\/span><br \/><span>He\u2019s hosted a handful of prior beefsteak dinners, a New York tradition dating back to the 19th century when men (and only men) gathered around long tables to binge on as much beef and beer as they could stomach, and typically without burdening themselves with any utensils.<\/span><br \/><span>Murphy\u2019s interpretation of these feasts is a bit less boorish, welcoming of both women and utensils, but they\u2019re certainly not boring.<\/span><br \/><span>\u201cIt\u2019s always a blast,\u201d Murphy said of the one-night-only beefsteak dinners he\u2019s held at his Marc179 restaurant space in Manhattan\u2019s Tribeca neighborhood. \u201cIt\u2019s gluttonous; we drink a lot and it\u2019s a good time.\u201d<\/span><br \/><span>Though perhaps unlikely bedfellows, Wyoming and New York at the very least have steak in common.<\/span><br \/><span>New York is home to the country\u2019s first steakhouse, which is convenient as cattle is\u00a0<a href=\"https:\/\/cowboystatedaily.com\/2026\/04\/01\/by-the-numbers-wyoming-agriculture-is-a-1-6-billion-industry\/\" rel=\"noopener noreferrer\" target=\"_blank\">Wyoming\u2019s No. 1 agricultural commodity<\/a>.<\/span><br \/><span>Credit for the idea for a Wyoming-themed feast goes to Fatima Asis, brand manager for Kirby-based\u00a0<a href=\"https:\/\/www.wyomingwhiskey.com\/\" rel=\"noopener noreferrer\" target=\"_blank\">Wyoming Whiskey<\/a>.\u00a0<\/span><br \/><span>While Murphy and Asis were chatting about some ways to spotlight the whiskey at one of his regular pop-up events, she suggested timing it with an annual Professional Bull Riders event held each January at New York\u2019s Madison Square Garden.<\/span><br \/><span>In addition to the opportunity to drum up some interest in Wyoming Whiskey, there was another fortuitous connection to tap.<\/span><br \/><span>Kate and Brad Mead, owners of Mead Ranch also co-founded Wyoming Whiskey, which explains how New Yorkers got the extra treat of sampling some beef shipped frozen straight from Wyoming.<\/span><br \/><span>\u201cMarc always serves great quality meat, but you can taste the difference of the Mead Ranch beef,\u201d Asis said. \u201cIt was a great touch.\u201d\u00a0<\/span><br \/><span>Not only that, there were some appetizers courtesy of the Jackson Hole Fine Dining Group.\u00a0<\/span><br \/><span>\u201cIt was a little night of Wyoming in New York,\u201d she said.<\/span><br \/><span>Breaking into the New York dining scene is a difficult feat for any whiskey brand, let alone one from a place many New Yorkers might have trouble locating on a map.;<\/span><br \/><span>It was the Wyomingness of this particular event that won people over.<\/span><br \/><span>New Yorkers got to rub elbows with the handful of Wyomingites who made the trek, including David DeFazio, who co-founded Wyoming Whiskey with the Meads, and came from Jackson.<\/span><br \/><span>Just as there\u2019s an \u201calmost unspoken friendship\u201d between Wyomingites who cross paths while far from home, this event also gave New Yorkers a taste of what the state has to offer.<\/span><br \/><span>\u201cIt was a really fun and very social evening where we featured Wyoming in every way possible,\u201d DeFazio said.<\/span><br \/><span>As Wyomingites well know, people are proud of the state and that\u2019s helped Wyoming Whiskey to find success nationwide, DeFazio said.\u00a0<\/span><br \/><span>\u201cIt\u2019s very cool to be able to walk into a restaurant or a bar anywhere in the country and see Wyoming Whiskey sitting on the bar,\u201d he said.<\/span><br \/><span>New York City has been a particular focus for the brand to achieve a foothold in, and that\u2019s aided by, a \u201ccool\u201d factor for the West in general right now, DeFazio said.\u00a0<\/span><br \/><span>\u201cEverybody wants to be a cowboy, so to speak,\u201d he said.<\/span><br \/><span>But as Murphy well knows, New Yorkers won\u2019t sugarcoat things \u2014 and the love that some people have found for the brand has been well-earned.<\/span><br \/><span>\u201cNew Yorkers have a discerning palette and they\u2019re very picky, but if it\u2019s good they\u2019re going to change their minds,\u201d Murphy said. \u201cEverybody who came was pleasantly surprised with how good the whiskey
